With Easter on its way, it is so easy to be tempted by all the chocolate covered treats and family meals and fall off the healthy eating and training wagon and have one too many cheat meals. But, we have discovered a perfect way to enjoy a healthy treat that feels a little but naughty….
Hot Cross Energy Balls!
These healthy snacks will both satisfy your sweet cravings and give you a much-needed energy boost for the training you have planned.
2/3 Cup of oats – These can be gluten free if you prefer
2/3 Cup pf ground almonds
1 tbsp oil
1 tsp orange zest
1 tsp vanilla extract
2 tbsp coconut oil
6 tbsp powdered icing sugar
Add oats, almonds, oil, orange zest, dates (with stones removed), vanilla extract and cinnamon into a food processor and pulse until well combined and it becomes sticky.
Form into balls and pop in the fridge until they firm up. Wisk up the coconut oil and icing sugar and pipe into crosses on the top of each ball.
Store them in an air tight container in the fridge for up to a week – if they last that long!!
